  • 250 grams of puff pastry
  • 3 tangerines
  • 300 ml of apple juice
  • half a teaspoon of agar powder
  • 200 ml of vanilla soy cream

Method

  1. Roll out the puff pastry on a baking sheet, using a fork to remove the classic holes.
  2. Place the pan in the preheated oven and cook for 15 minutes. The ideal temperature is 180 degrees but always keep an eye on it so it doesn't burn.
  3. When the puff pastry is golden, remove it from the oven and let it cool.

While the puff pastry cools, prepare a good covering jelly made from apple juice. That's how:

  1. Place the apple juice in a saucepan, add the agar and heat over low heat. While stirring, wait for it to boil and leave on the heat for another two minutes. At this stage it is important to mix to avoid ensuring a homogeneous result.
  2. The first covering layer will consist of soy cream. When the puff pastry is warm, add a layer of vanilla soy cream on which you will arrange the mandarin wedges in an orderly way. If you prefer, you can add some white grapes or other fancy fruit.
  3. Pour over the gelatin when it is still warm. The gelatin will solidify as it cools.
